If you want this on a system that runs ecasound, I would say something like
ecasound -a:1,2 -i /dev/dsp -a:1 -o somefile.ogg -a:2 -o /dev/dsp
could do the trick.
On the eca-list there is a discussion going on on running ecasound under
cygwin. So with a bit of luck it might be possible to even use it under
Windows.
