[vorbis] Encode on fly from device?

I have had good luck using brec which is part of the Debian
distribution.  It will read from the sound card and output to stdout.  It
was given very good performance for me.  As to listening as you record,
couldn't you use the ogg-playing program of your choice directly on the
.ogg file?
