Hello,
Airtime is built on top of Liquidsoap. You can use Liequidsoap without
Airtime, but the ohter way around is not possible.
CentOS is a respected server distribution, but in future consider Debian or
Arch Linux distributions for audio projects as most of the packages are
ready-made in the repositories.
Find an installation tutorial for RHEL-based systems. Eihter compile the
software yourself or use ready-made packages for Fedora at
ftp://anonymous@lcftp.mezon.ru/pub/ls/f18/liquidsoap-1.1.0-1.fc18.x86_64.rpm.
Note I don't have experience with those.

Liquidsoap is depentent on some libraries (liblame, libfaac, ocaml,
vorbis, …) that need to be installed from repositories or manually compiled
prior to installing Liquidsoap.
