The main one I use that I absolutely could not live without is 
FruityLoops.  If you've never really used it you don't know what you are 
missing.  It is absolutely the only program like it.  It's a 
quasi-pattern/sample based music creation program, but it is really so 
much more.  Nothing like Acid really.  Although Acid is another PC only 
program.  Also I use SoundForge which in my opinion is the best 2-track 
editor around and Vegas.  I've used Protools, Cakewalk (and now Sonar) 
and I like Vegas so much more.  So much more intuitive and simple.  
Although it doesn't work with MIDI.  I don't use MIDI with digital audio 
tracks so it doesn't matter to me.  Also Mac doesn't have a really good 
CD Mastering program.  I have taken a number of computer music courses 
that were all Mac based and I would bring in my work from my PC (which 
was older than the Macs) and people were blown away by what I could do 
on my PC.

Anyway, that's my list I suppose.  One other thing I would like to 
mention.  If Macs are such music machines, why do you have to buy an 
expensive add-on just to connect a MIDI keyboard to the computer?  Just 
so you know all PCs with a standard game port (read: 99% of PCs) just 
need the $5-$10 cable to connect MIDI, it's built in.
