Well, RTP would be the obvious choice. Admittedly RTP is typically
encapsulated within UDP - but the distinction isn't entirely irrelevant.

Not neccesarily - you'd have delay, but it needn't be because of
buffering. You'll usually have _some_ buffering at some point in the
production/streaming/listening chain, though.
