I've found lots of videos in WebM format.

My understanding is that, per [1], after going to http://www.youtube.com/html5 
you must first enroll in the HTML5 experiment before doing anything else. It's 
pretty easy: Click on Join the HTML5 Beta.

Once that's out of the way, you're supposed to add &webm=1 to the end of the 
URL.
