Where do I set the <errorlog>-</errorlog>?
In the /etc/init.d/icecast file?

Maybe it can not write to the error log (e.g. because of a permission
problem).
Please check the permissions of the log files.
You can also try to set:
<errorlog>-</errorlog>
This should let Icecast log to stderr.
