If by "realing" you mean relaying then you can turn metadata completely off.
Just set:

<relay-shoutcast-metadata>0</relay-shoutcast-metadata>

in the corresponding <relay>.

In addition you could create a <mount> section with the same mount-point name and override some of the metadata there.
